Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 4 oz can green chiles (optional)
  • 1 tsp chili powder
  • ½ tsp cumin
  • Salt and pepper to taste
  • 8 –10 flour or corn tortillas
  • 1 10 oz can red enchilada sauce (or homemade)
  • 2 cups shredded cheese cheddar, Monterey Jack, or Mexican blend
  • Optional toppings: sour cream green onions, cilantro, avocado

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a skillet over medium heat, cook ground beef and onions until browned. Drain excess fat.
  • Stir in garlic, green chiles, chili powder, cumin, salt, and pepper. Cook for 2 more minutes.
  • Warm tortillas to make them flexible (microwave or skillet).
  • Spread 2–3 tablespoons of beef filling down the center of each tortilla, sprinkle with cheese, and roll up.
  • Place enchiladas seam-side down in a greased 9x13" baking dish.
  • Pour enchilada sauce over the top and sprinkle with remaining cheese.
  • Cover with foil and bake for 20 minutes. Uncover and bake an additional 5 minutes until bubbly.
  • Garnish with toppings and serve hot.

Notes

  • Make it spicy: Add jalapeños or use spicy enchilada sauce.
  • Swap beef for ground turkey or black beans for a lighter version.
  • Serve with Mexican rice or guacamole on the side.
