  • 2 medium zucchini sliced into ¼-inch rounds
  • 1 large egg beaten
  • ½ cup grated Parmesan cheese
  • ½ cup almond flour or breadcrumbs pork rinds for keto
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • Salt And pepper to taste
  • Optional: marinara sauce for dipping

Instructions
 

  • Preheat air fryer to 400°F (200°C).
  • In a small bowl, mix Parmesan, almond flour/breadcrumbs, Italian seasoning, garlic powder, salt & pepper.
  • Dip each zucchini round into the beaten egg, then coat in the parmesan mixture.
  • Place zucchini rounds in a single layer in the air fryer basket (work in batches if needed).
  • Air fry for 8–10 minutes, flipping halfway, until golden and crisp.
  • Serve with warm marinara or your favorite dipping sauce.

Notes

  • Swap parmesan for grated mozzarella for a gooier bite.
  • Add red pepper flakes for a little kick.
  • Use panko breadcrumbs for extra crunch if not low-carb.
