Oven Method (Sheet Pan)
Preheat oven to 425°F (220°C).
On a large sheet pan, combine potatoes, bell peppers, onion, and sausage slices.
Drizzle with olive oil and sprinkle on garlic powder, paprika, Italian seasoning, salt, and pepper. Toss everything well to coat evenly.
Spread out in a single layer and roast for 30–35 minutes, stirring halfway, until potatoes are tender and golden.
Garnish with chopped parsley before serving.
Skillet Method (Stovetop)
Heat 1 tbsp olive oil in a large skillet over medium heat.
Add potatoes with a pinch of salt and cook covered for 10–12 minutes, stirring occasionally.
Add sausage, peppers, and onion with remaining oil and seasonings. Cook uncovered for 10–12 more minutes, until everything is browned and cooked through.
