Prep the steak: Pat steak pieces dry with a paper towel. Season generously with salt, pepper, and Italian seasoning.
Heat olive oil in a large skillet over high heat until shimmering.
Sear the steak bites in batches (don’t overcrowd the pan), cooking each side for 1–2 minutes until browned and crisp. Transfer to a plate.
