  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 cup baby spinach or kale optional
  • 2 medium sweet potatoes peeled and diced
  • ½ tsp smoked paprika
  • ½ tsp dried thyme
  • ½ tsp cumin
  • Salt & pepper to taste
  • ¾ cup shredded cheese cheddar, mozzarella, or your choice
  • Fresh parsley or green onions for garnish

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  • In a large skillet, heat olive oil over medium heat. Add onion and garlic; cook until fragrant (2–3 mins).
  • Add ground turkey. Cook until browned, breaking it up with a spoon (5–6 mins).
  • Add bell pepper, spinach (if using), and seasonings (paprika, thyme, cumin, salt, and pepper). Stir and cook for 3–4 more minutes.
  • Meanwhile, boil sweet potatoes in salted water for 8–10 minutes until fork tender. Drain.
  • Layer sweet potatoes in the baking dish. Top with the turkey mixture, and gently mix or layer.
  • Sprinkle cheese evenly over the top.
  • Bake for 10–15 minutes until the cheese is melted and bubbly.
  • Garnish with fresh parsley or green onions. Serve warm.

Notes

  • Swap ground turkey with ground chicken or beef if preferred.
  • Add black beans or corn for a Southwestern twist.
  • Make it dairy-free by using vegan cheese or skipping it entirely.
