- 1 tbsp olive oil
- 1 small onion diced
- 2 cloves garlic minced
- 1 red bell pepper chopped
- 1 cup baby spinach or kale optional
- 2 medium sweet potatoes peeled and diced
- ½ tsp smoked paprika
- ½ tsp dried thyme
- ½ tsp cumin
- Salt & pepper to taste
- ¾ cup shredded cheese cheddar, mozzarella, or your choice
- Fresh parsley or green onions for garnish

Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
In a large skillet, heat olive oil over medium heat. Add onion and garlic; cook until fragrant (2–3 mins).
Add ground turkey. Cook until browned, breaking it up with a spoon (5–6 mins).
Add bell pepper, spinach (if using), and seasonings (paprika, thyme, cumin, salt, and pepper). Stir and cook for 3–4 more minutes.
Meanwhile, boil sweet potatoes in salted water for 8–10 minutes until fork tender. Drain.
Layer sweet potatoes in the baking dish. Top with the turkey mixture, and gently mix or layer.
Sprinkle cheese evenly over the top.
Bake for 10–15 minutes until the cheese is melted and bubbly.
Garnish with fresh parsley or green onions. Serve warm.
