Ingredients
  

  • For the Stir Fry:
  • 1 lb ground turkey
  • 1 tbsp olive oil or sesame oil
  • 1 cup broccoli florets
  • 1 bell pepper sliced
  • 1 cup snap peas or green beans
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated (or ½ tsp ground ginger)
  • Salt & pepper to taste
  • Cooked rice or cauliflower rice for serving
  • For the Teriyaki Sauce:
  • ¼ cup low-sodium soy sauce
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp cold water to thicken

Instructions
 

  • Make the teriyaki sauce: In a small bowl, whisk soy sauce, honey, rice vinegar, sesame oil, and cornstarch slurry. Set aside.
  • In a large skillet or wok, heat olive oil over medium-high heat.
  • Add ground turkey, season with salt and pepper, and cook until browned, breaking it up with a spoon (about 5–6 minutes).
  • Add garlic and ginger; cook for 1 minute until fragrant.
  • Add broccoli, bell pepper, and snap peas. Sauté for 4–5 minutes until veggies are crisp-tender.
  • Pour in the teriyaki sauce. Stir well and cook for another 2–3 minutes until the sauce thickens and coats everything evenly.
  • Serve over rice or cauliflower rice. Garnish with sesame seeds or green onions, if desired.

Notes

  • Make it spicy: Add a dash of sriracha or crushed red pepper.
  • Use frozen stir fry veggies if you're short on time.
