- 1 lb ground turkey
- 1 tbsp olive oil or sesame oil
- 1 cup broccoli florets
- 1 bell pepper sliced
- 1 cup snap peas or green beans
- 2 cloves garlic minced
- 1 tsp fresh ginger grated (or ½ tsp ground ginger)
- Salt & pepper to taste
- Cooked rice or cauliflower rice for serving
- For the Teriyaki Sauce:
- ¼ cup low-sodium soy sauce
- 2 tbsp honey or brown sugar
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp cornstarch mixed with 2 tbsp cold water to thicken

Make the teriyaki sauce: In a small bowl, whisk soy sauce, honey, rice vinegar, sesame oil, and cornstarch slurry. Set aside.
In a large skillet or wok, heat olive oil over medium-high heat.
Add ground turkey, season with salt and pepper, and cook until browned, breaking it up with a spoon (about 5–6 minutes).
Add garlic and ginger; cook for 1 minute until fragrant.
Add broccoli, bell pepper, and snap peas. Sauté for 4–5 minutes until veggies are crisp-tender.
Pour in the teriyaki sauce. Stir well and cook for another 2–3 minutes until the sauce thickens and coats everything evenly.
Serve over rice or cauliflower rice. Garnish with sesame seeds or green onions, if desired.
