- 2 lbs boneless skinless chicken breasts
- 1 medium onion chopped
- 3 cloves garlic minced
- 1 can 14.5 oz diced tomatoes
- 1 can 6 oz tomato paste
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes optional
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 1/2 cups uncooked pasta such as rotini or penne
- Fresh parsley for garnish (optional)
Prepare the ingredients: Chop the onion and garlic. Cut the chicken into large chunks.
Layer the ingredients in the Crock Pot: Add the chicken, onion, garlic, diced tomatoes, tomato paste, chicken broth, basil, oregano, red pepper flakes (if using), and salt and pepper into the slow cooker. Stir to combine.
Cook the soup: Cover the Crock Pot and cook on low for 6 hours or high for 3 hours, until the chicken is cooked through and easily shredded.
Shred the chicken: Once the chicken is done, remove it from the soup and shred it using two forks. Return the shredded chicken to the Crock Pot.
Add cream and Parmesan: Stir in the heavy cream and grated Parmesan cheese. Add the uncooked pasta and stir again.
Cook the pasta: Cover and cook for an additional 30 minutes on low (or until the pasta is tender).
Serve: Ladle the soup into bowls, garnish with fresh parsley, and serve hot.
- Storage: This soup can be stored in an airtight container in the fridge for up to 4 days.
- Freezing: Freeze this soup (without the pasta) in a freezer-safe container for up to 3 months. To reheat, defrost and add cooked pasta when serving.
- Pasta: You can use any small pasta shape, like penne or rotini. For gluten-free options, use gluten-free pasta.
- Flavor boost: For extra flavor, top the soup with a sprinkle of extra Parmesan cheese or a drizzle of olive oil before serving.
