Cook the Noodles:
Boil a large pot of salted water. Cook the noodles according to the package instructions until al dente, then drain and set aside. Reserve about 1/2 cup of pasta water for the sauce.
Prepare the Chicken:
Season both sides of the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F/75°C). Remove from the skillet and set aside to rest.
Make the Buttered Sauce:
In the same skillet, add 2 tablespoons of butter and minced garlic. Sauté for 1-2 minutes, until fragrant. Add chicken broth (and heavy cream if desired) and bring to a simmer. Stir to combine, scraping up any bits from the pan. Let it simmer for 3-4 minutes, reducing slightly.
Combine the Noodles:
Add the cooked noodles to the skillet with the sauce. Toss to coat the noodles in the buttered sauce. If the sauce is too thick, add some reserved pasta water to achieve the desired consistency.
Finish the Dish:
Slice the cooked chicken and place it on top of the buttered noodles. Add the remaining 2 tablespoons of butter to the noodles for extra richness and flavor. Garnish with fresh parsley and a sprinkle of grated Parmesan cheese.
Serve and Enjoy:
Serve the dish immediately, ensuring each plate has a generous portion of chicken and noodles.
- You can substitute chicken breasts with thighs for a juicier option.
- Add a splash of lemon juice or a sprinkle of lemon zest for a citrusy twist.
- To make it a one-pan meal, you can sauté vegetables like spinach, mushrooms, or peas in the same skillet after cooking the chicken and before making the sauce.
- For a lighter version, use less butter and substitute the cream with low-fat milk.
