- 1 lb Italian sausage mild or spicy, your choice
- 1 medium onion diced
- 3 garlic cloves minced
- 3 medium potatoes diced
- 4 cups chicken broth or vegetable broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups spinach optional for added greens
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 tbsp olive oil for cooking
- Red pepper flakes optional, for heat

Cook the Sausage: In a large pot, heat olive oil over medium heat. Add the sausage and cook until browned, breaking it up into small pieces as it cooks. Remove excess grease if necessary.
Sauté Vegetables: Add the diced onion and minced garlic to the pot with the sausage, sautéing until softened, about 3-5 minutes.
Add Broth & Potatoes: Stir in the diced potatoes, chicken broth, and Italian seasoning. Bring to a boil, then reduce to a simmer and cook for 15-20 minutes, or until potatoes are tender.
Add Cream & Cheese: Stir in the heavy cream and Parmesan cheese, and let it simmer for another 5 minutes, allowing the soup to thicken and become creamy.
Finish with Greens: If using spinach, add it to the soup and stir until wilted, about 2-3 minutes.
Season & Serve: Season with salt, pepper, and red pepper flakes (if desired). Serve hot, garnished with additional Parmesan if preferred.
