  • 1 lb Italian sausage mild or spicy, your choice
  • 1 medium onion diced
  • 3 garlic cloves minced
  • 3 medium potatoes diced
  • 4 cups chicken broth or vegetable broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups spinach optional for added greens
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil for cooking
  • Red pepper flakes optional, for heat

Instructions
 

  • Cook the Sausage: In a large pot, heat olive oil over medium heat. Add the sausage and cook until browned, breaking it up into small pieces as it cooks. Remove excess grease if necessary.
  • Sauté Vegetables: Add the diced onion and minced garlic to the pot with the sausage, sautéing until softened, about 3-5 minutes.
  • Add Broth & Potatoes: Stir in the diced potatoes, chicken broth, and Italian seasoning. Bring to a boil, then reduce to a simmer and cook for 15-20 minutes, or until potatoes are tender.
  • Add Cream & Cheese: Stir in the heavy cream and Parmesan cheese, and let it simmer for another 5 minutes, allowing the soup to thicken and become creamy.
  • Finish with Greens: If using spinach, add it to the soup and stir until wilted, about 2-3 minutes.
  • Season & Serve: Season with salt, pepper, and red pepper flakes (if desired). Serve hot, garnished with additional Parmesan if preferred.

Notes

  • For a lighter version, you can use turkey sausage instead of pork sausage.
  • You can freeze the soup for up to 3 months. Reheat gently on the stove when ready to serve.
  • If you prefer a thicker soup, mash some of the potatoes in the pot to create a creamy texture.
