Ingredients
  

  • 6 medium-sized russet potatoes peeled and cubed
  • 4 slices of bacon cooked and crumbled
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese softened
  • 1/4 cup green onions chopped
  • 1/4 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup mozzarella cheese shredded (for topping)
  • 1/4 cup chopped parsley for garnish

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Boil the cubed potatoes in salted water for about 10-12 minutes or until fork-tender. Drain and set aside.
  • In a large mixing bowl, combine sour cream, cream cheese, milk, garlic powder, onion powder, paprika, and a pinch of salt and pepper. Stir until smooth.
  • Add the drained potatoes to the bowl and gently mix until the potatoes are coated with the creamy mixture.
  • Fold in the crumbled bacon, shredded cheddar cheese, and green onions.
  • Transfer the potato mixture into a greased 9x13-inch baking dish. Spread evenly.
  • Top with shredded mozzarella cheese and bake for 25-30 minutes or until the cheese is bubbly and golden brown.
  • Garnish with chopped parsley and serve hot.

Notes

  • For extra flavor, try adding some diced jalapeños or green chilies to the mixture for a bit of heat.
  • You can make this dish ahead of time by assembling everything and refrigerating it. Just bake it when ready to serve.
  • If you prefer a lighter version, swap out the sour cream and cream cheese for Greek yogurt.
