Ingredients
  

  • 1 lb ground chicken
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs preferably panko
  • 2 cloves garlic minced
  • 1 egg
  • 1/4 cup chopped fresh parsley optional
  • 1/2 tsp onion powder
  • 1/2 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil for greasing
  • 1 tbsp butter for topping, optional

Instructions
 

  • Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or line it with parchment paper.
  • In a large bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, minced garlic, egg, parsley, onion powder, basil, salt, and pepper.
  • Mix everything together until just combined. Avoid overmixing to keep the meatloaf tender.
  • Divide the mixture into four equal portions and shape each portion into a small loaf (about 3 inches long).
  • Place the mini meatloaves on the prepared baking sheet. Drizzle olive oil over the top of each meatloaf to help them brown.
  • Bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C) and the tops are golden brown.
  • (Optional) For an extra boost of flavor, melt butter and drizzle it over the meatloaves right before serving.
  • Serve with your favorite sides like mashed potatoes, steamed vegetables, or a fresh salad.

Notes

  • For a lighter version, you can use ground turkey instead of ground chicken.
  • If you prefer a crispier texture, try baking the meatloaves on a wire rack placed over the baking sheet.
  • You can freeze the cooked meatloaves for up to 3 months. Just reheat them in the oven at 350°F (175°C) for 15-20 minutes.
