- 1 lb ground chicken
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs preferably panko
- 2 cloves garlic minced
- 1 egg
- 1/4 cup chopped fresh parsley optional
- 1/2 tsp onion powder
- 1/2 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil for greasing
- 1 tbsp butter for topping, optional
Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or line it with parchment paper.
In a large bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, minced garlic, egg, parsley, onion powder, basil, salt, and pepper.
Mix everything together until just combined. Avoid overmixing to keep the meatloaf tender.
Divide the mixture into four equal portions and shape each portion into a small loaf (about 3 inches long).
Place the mini meatloaves on the prepared baking sheet. Drizzle olive oil over the top of each meatloaf to help them brown.
Bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C) and the tops are golden brown.
(Optional) For an extra boost of flavor, melt butter and drizzle it over the meatloaves right before serving.
Serve with your favorite sides like mashed potatoes, steamed vegetables, or a fresh salad.
- For a lighter version, you can use ground turkey instead of ground chicken.
- If you prefer a crispier texture, try baking the meatloaves on a wire rack placed over the baking sheet.
- You can freeze the cooked meatloaves for up to 3 months. Just reheat them in the oven at 350°F (175°C) for 15-20 minutes.
