Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Prepare Brussels Sprouts: Trim the ends of the Brussels sprouts and slice them in half.
Cook Bacon: In a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and set it aside, leaving a little bacon fat in the pan.
Season Brussels Sprouts: In a large bowl, toss the Brussels sprouts with olive oil, garlic powder, red pepper flakes (if using), and salt and pepper.
Roast Brussels Sprouts: Spread the Brussels sprouts in a single layer on the prepared baking sheet. Roast for 20-25 minutes, tossing halfway through, until the Brussels sprouts are golden brown and crispy on the edges.
Prepare Glaze: While the Brussels sprouts roast, combine honey, balsamic vinegar, and the reserved bacon fat in a small saucepan over low heat. Stir until the honey has melted and the glaze is smooth.
Combine: Once the Brussels sprouts are roasted, remove them from the oven. Drizzle the honey glaze over the Brussels sprouts and toss to coat. Add the crispy bacon and toss again.
