  • 1 lb ground beef
  • 1 cup long-grain white rice uncooked
  • 1 can 10.5 oz cream of mushroom soup
  • 1 can 10.5 oz tomato soup
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup milk
  • 1 small onion finely chopped
  • 1/2 cup frozen peas optional
  • Salt and pepper to taste
  • 1 tbsp olive oil for cooking

Instructions
 

  • Cook the Ground Beef:
  • In a large skillet, heat olive oil over medium heat.
  • Add the chopped onion and cook for 2-3 minutes, until softened.
  • Add the ground beef and cook until browned, breaking it up into crumbles as it cooks. Drain any excess fat if needed.
  • Prepare the Rice Mixture:
  • In a large mixing bowl, combine the cooked ground beef, rice, cream of mushroom soup, tomato soup, milk, and 1 cup of shredded cheddar cheese.
  • Stir in peas, if using, and season with salt and pepper to taste.
  • Assemble the Casserole:
  • Preheat the oven to 350°F (175°C).
  • Lightly grease a 9x13-inch baking dish.
  • Pour the beef and rice mixture into the baking dish and spread it evenly.
  • Bake the Casserole:
  • Cover the dish with aluminum foil and bake for 30 minutes.
  • After 30 minutes, remove the foil and sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top.
  • Return to the oven and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
  • Serve:
  • Let the casserole cool for a few minutes before serving. Slice into portions and serve with a side salad or steamed vegetables.

  • You can substitute ground turkey or chicken for a leaner version of this casserole.
