  • 1 egg
  • 1/4 cup milk
  • 1 packet 1 oz onion soup mix (or 1 small onion, finely chopped)
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups mashed potatoes prepared, either homemade or store-bought
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon crumbled
  • 1/4 cup green onions chopped (optional for garnish)
  • 1/2 cup sour cream optional for serving

Instructions
 

  • Prepare the Meatloaf Base:
  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the ground beef, breadcrumbs, egg, milk, onion soup mix (or chopped onion), garlic powder, salt, and black pepper. Mix until everything is well incorporated.
  • Shape and Bake the Meatloaf:
  • Form the meat mixture into a loaf and place it in a lightly greased 9x13-inch baking dish.
  • Bake for 25-30 minutes, or until the meatloaf is cooked through (internal temperature should reach 160°F/71°C).
  • Prepare the Casserole:
  • While the meatloaf is baking, prepare the mashed potatoes and set aside.
  • Once the meatloaf is done, spread the mashed potatoes evenly over the top of the meatloaf.
  • Sprinkle shredded cheddar cheese evenly over the mashed potatoes, then top with crumbled bacon.
  • Finish the Casserole:
  • Return the casserole to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Serve:
  • Let the casserole cool for a few minutes before serving. Garnish with chopped green onions and a dollop of sour cream, if desired.
