Prepare the Chicken Filling:

Heat a skillet over medium heat and cook the diced chicken until browned and cooked through, about 5-7 minutes.
Add the sauce mixture to the skillet and stir to coat the chicken. Cook for another 2 minutes until the sauce thickens slightly. Remove from heat.
Make the Slaw:
In a mixing bowl, combine rice vinegar, soy sauce, honey, and sesame oil.
Toss the coleslaw mix with the dressing until evenly coated. Add green onion and sesame seeds if desired. Set aside.
Prepare the Wonton Tacos:
To make the wonton taco shells, lightly brush wonton wrappers with oil.
Frying Option: Heat oil in a skillet and fry each wrapper for 30-60 seconds, folding them gently with tongs to form a taco shape.
Baking Option: Drape wonton wrappers over the edges of an oven rack to form a taco shape and bake at 375°F (190°C) for 5-7 minutes, or until crispy.
Assemble the Tacos:
Fill each wonton shell with the chicken mixture and top with the prepared slaw.
Drizzle with sweet chili sauce, if desired, and serve with lime wedges on the side.
