Instructions

  • Cook the Tater Tots:
  • Preheat your oven to 425°F (220°C).
  • Spread the frozen tater tots in a single layer on a baking sheet.
  • Bake for 20-25 minutes, flipping halfway, until golden and crispy.
  • Prepare the Scrambled Eggs:
  • While the tater tots are baking, whisk the eggs in a bowl with a pinch of salt and pepper.
  • Heat a nonstick skillet over medium heat and scramble the eggs until soft and cooked through, about 2-3 minutes. Remove from heat.
  • Assemble the Bowls:
  • Once the tater tots are done, divide them among 4 bowls.
  • Top each bowl with scrambled eggs, shredded cheese, crumbled bacon (or your choice of protein), and green onions.

Notes

  • Make it Vegetarian: Skip the bacon or sausage and load the bowl with extra veggies like peppers, onions, and mushrooms.
  • Toppings: You can add a fried egg on top for an extra boost of protein.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat in the microwave or oven to keep the tater tots crispy.
