Ingredients
  

  • 1 1/2 cups mushrooms sliced (cremini, button, or shiitake)
  • 2 tbsp butter divided
  • 2 cloves garlic minced
  • 4 slices of bread sourdough, white, or whole-grain
  • 1 cup shredded cheese mozzarella, Gruyère, or cheddar
  • 1/4 cup Parmesan cheese grated
  • 1 tbsp olive oil optional, for cooking mushrooms
  • Salt and pepper to taste

Instructions
 

  • Sauté the Mushrooms:
  • Heat 1 tbsp butter (or olive oil) in a skillet over medium heat.
  • Add the sliced mushrooms and cook, stirring occasionally, until they release their moisture and begin to brown, about 5-7 minutes.
  • Add the minced garlic and cook for another 1-2 minutes. Season with salt and pepper to taste. Remove from heat and set aside.
  • Assemble the Sandwiches:
  • Butter one side of each slice of bread.
  • On the unbuttered side of two slices, layer shredded cheese, sautéed mushrooms, Parmesan cheese, and more shredded cheese. Top with the other slices of bread, buttered side out.
  • Cook the Grilled Cheese:
  • Heat a clean skillet or griddle over medium-low heat. Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese begins to melt, about 3-4 minutes per side. Press gently with a spatula for even cooking.
  • Flip and repeat on the other side, ensuring the cheese is fully melted.
  • Serve:
  • Slice the sandwiches in half and serve immediately, optionally with a side of soup or salad.
