- 1 1/2 cups mushrooms sliced (cremini, button, or shiitake)
- 2 tbsp butter divided
- 2 cloves garlic minced
- 4 slices of bread sourdough, white, or whole-grain
- 1 cup shredded cheese mozzarella, Gruyère, or cheddar
- 1/4 cup Parmesan cheese grated
- 1 tbsp olive oil optional, for cooking mushrooms
- Salt and pepper to taste
Sauté the Mushrooms:
Heat 1 tbsp butter (or olive oil) in a skillet over medium heat.
Add the sliced mushrooms and cook, stirring occasionally, until they release their moisture and begin to brown, about 5-7 minutes.
Add the minced garlic and cook for another 1-2 minutes. Season with salt and pepper to taste. Remove from heat and set aside.
Assemble the Sandwiches:
Butter one side of each slice of bread.
On the unbuttered side of two slices, layer shredded cheese, sautéed mushrooms, Parmesan cheese, and more shredded cheese. Top with the other slices of bread, buttered side out.
Cook the Grilled Cheese:
Heat a clean skillet or griddle over medium-low heat. Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese begins to melt, about 3-4 minutes per side. Press gently with a spatula for even cooking.
Flip and repeat on the other side, ensuring the cheese is fully melted.
Serve:
Slice the sandwiches in half and serve immediately, optionally with a side of soup or salad.
- Cheese Options: For extra flavor, try a mix of cheeses like Swiss, Fontina, or Brie.
- Bread Choices: Sourdough or rustic bread gives a nice texture and flavor, but any sturdy bread works.
- Add-Ins: Sprinkle fresh herbs like thyme or parsley into the mushroom mixture for added aroma.
- Storage: While best served fresh, you can reheat leftovers in a skillet or oven to restore crispness.
