  • 4 boneless skinless chicken breasts (pounded to 1/2-inch thickness)
  • 1/2 cup all-purpose flour
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • For the Lemon Sauce:
  • 1/3 cup chicken broth
  • 1/3 cup dry white wine optional, or substitute with more broth
  • 3 tbsp fresh lemon juice about 1 lemon
  • 2 tbsp capers rinsed and drained
  • 2 tbsp unsalted butter
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Prepare the Chicken:
  • Season the chicken breasts with salt and pepper on both sides. Dredge them in flour, shaking off any excess.
  • Heat the olive oil and butter in a large skillet over medium-high heat.
  • Cook the chicken breasts for 3-4 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside on a plate.
  • Make the Lemon Sauce:
  • In the same skillet, reduce heat to medium and add the chicken broth, wine (if using), and lemon juice. Use a wooden spoon to scrape up any browned bits from the bottom of the pan.
  • Stir in the capers and let the sauce simmer for 3-4 minutes until slightly reduced.
  • Add the butter to the sauce and stir until melted and silky.
  • Combine and Serve:
  • Return the chicken breasts to the skillet and spoon the lemon-caper sauce over the top. Heat for 1-2 minutes to warm through.
  • Garnish with fresh parsley and serve immediately.
