- 1/2 cup all-purpose flour
- Salt and black pepper to taste
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- For the Lemon Sauce:
- 1/3 cup chicken broth
- 1/3 cup dry white wine optional, or substitute with more broth
- 3 tbsp fresh lemon juice about 1 lemon
- 2 tbsp capers rinsed and drained
- 2 tbsp unsalted butter
- Fresh parsley chopped (for garnish)

Prepare the Chicken:
Season the chicken breasts with salt and pepper on both sides. Dredge them in flour, shaking off any excess.
Heat the olive oil and butter in a large skillet over medium-high heat.
Cook the chicken breasts for 3-4 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside on a plate.
Make the Lemon Sauce:
In the same skillet, reduce heat to medium and add the chicken broth, wine (if using), and lemon juice. Use a wooden spoon to scrape up any browned bits from the bottom of the pan.
Stir in the capers and let the sauce simmer for 3-4 minutes until slightly reduced.
Add the butter to the sauce and stir until melted and silky.
Combine and Serve:
Return the chicken breasts to the skillet and spoon the lemon-caper sauce over the top. Heat for 1-2 minutes to warm through.
Garnish with fresh parsley and serve immediately.
