  • 4 large eggs room temperature
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • For the Filling:
  • 1 cup heavy whipping cream cold
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 6 Ferrero Rocher chocolates crushed
  • 6 Oreo cookies crushed
  • For the Topping:
  • 1/2 cup whipped cream or chocolate ganache
  • 1/4 cup mini M&Ms
  • Additional Ferrero Rocher chocolates and crushed Oreos for garnish

  • Prepare the Cake:
  • Preheat your oven to 350°F (175°C). Line a 10x15-inch jelly roll pan with parchment paper and lightly grease it.
  • In a mixing bowl, beat the eggs and sugar on high speed until thick, pale, and tripled in volume (about 5-7 minutes).
  • Sift together the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the egg mixture in small batches to avoid deflating the batter.
  • Spread the batter evenly into the prepared pan. Bake for 12-15 minutes or until the cake springs back when lightly touched.
  • While still warm, roll the cake (along with the parchment paper) into a tight spiral. Allow it to cool completely.
  • Prepare the Filling:
  • Whip the heavy cream, powdered sugar, and vanilla extract in a chilled bowl until stiff peaks form.
  • Gently fold in the crushed Ferrero Rocher chocolates and Oreo cookies.
  • Assemble the Roll Cake:
  • Carefully unroll the cooled cake and spread the filling evenly across the surface, leaving a 1/2-inch border around the edges.
  • Re-roll the cake tightly, removing the parchment paper as you roll. Place seam-side down on a serving plate.
  • Decorate the Cake:
  • Spread whipped cream or ganache over the top of the roll cake. Sprinkle with mini M&Ms and garnish with additional Ferrero Rocher chocolates and crushed Oreos.
  • Chill and Serve:
  • Refrigerate for at least 1 hour to allow the filling to set. Slice and serve chilled.
