Ingredients
  

  • For the Chicken and Rice:
  • 1 lb boneless skinless chicken breasts or thighs (cut into bite-sized pieces)
  • 1 tbsp olive oil
  • 1 packet taco seasoning or homemade blend
  • 1 cup long-grain white rice uncooked
  • 1 3/4 cups chicken broth
  • 1/2 cup salsa mild, medium, or spicy
  • 1 cup canned black beans drained and rinsed
  • 1 cup canned corn drained
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • For Toppings:
  • 1 cup shredded cheddar or Mexican blend cheese
  • Diced avocado
  • Chopped tomatoes
  • Sliced green onions
  • Chopped fresh cilantro
  • Lime wedges

Instructions
 

  • Cook the Chicken:
  • Heat olive oil in a large skillet or sauté pan over medium heat.
  • Add the chicken pieces and season with half of the taco seasoning. Cook for 5-6 minutes, stirring occasionally, until browned and cooked through. Remove the chicken and set aside.
  • Cook the Rice:
  • In the same skillet, add the rice, chicken broth, salsa, garlic powder, onion powder, and the remaining taco seasoning. Stir to combine.
  • Bring to a simmer, then lower the heat to medium-low. Cover and cook for 12-15 minutes, stirring occasionally, until the rice is tender and the liquid is absorbed.
  • Add Beans and Corn:
  • Stir in the black beans and corn. Return the cooked chicken to the skillet and mix everything together. Cook for an additional 2-3 minutes until warmed through.
  • Add Cheese:
  • Sprinkle the shredded cheese evenly over the top. Cover the skillet and let the cheese melt, about 2-3 minutes.
  • Serve:
  • Spoon into bowls and top with diced avocado, chopped tomatoes, green onions, cilantro, and a squeeze of fresh lime juice.

    • Swap chicken with ground beef or turkey for variety.
    • Use brown rice instead of white rice for a whole-grain option (adjust cooking time as needed).
