Instructions

  • Cook the Pasta:
  • Bring a large pot of salted water to a boil and cook the pasta according to package instructions, usually 8-10 minutes, until al dente. Drain, reserving 1/2 cup of pasta water for the sauce, and set aside.
  • Cook the Chicken Bites:
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken pieces and season with salt, pepper, and paprika (if using). Cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and golden brown.
  • Add 2 tablespoons of butter and minced garlic to the skillet. Cook for an additional 1-2 minutes, until the garlic is fragrant. Remove from heat and set aside.
  • Make the Creamy Parmesan Sauce:
  • In the same skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  • Stir in the heavy cream and chicken broth (or reserved pasta water). Bring to a simmer and cook for 3-4 minutes, allowing the sauce to thicken slightly.
  • Gradually add the grated Parmesan cheese, stirring constantly until the cheese is melted and the sauce becomes creamy. Season with salt and pepper to taste.
  • Combine Pasta and Sauce:
  • Add the cooked pasta to the skillet with the creamy Parmesan sauce, tossing to coat the pasta evenly. If the sauce is too thick, add a bit more pasta water or chicken broth to reach your desired consistency.
  • Serve:
  • Divide the creamy Parmesan pasta among plates and top with the garlic butter chicken bites. Garnish with fresh chopped parsley for color and extra flavor.

Notes

  • For added richness, you can stir in some cream cheese or use half-and-half instead of heavy cream.
  • You can substitute the chicken for shrimp or other proteins like turkey for variety.
  • To make it a one-pan dish, consider adding vegetables like spinach or sun-dried tomatoes to the sauce.
  • Leftovers can be stored in an airtight container in the fridge for 2-3 days. Reheat gently on the stove, adding a splash of milk or cream if needed.
