  • 1.5 lbs baby potatoes halved
  • 4 slices bacon chopped
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp Dijon mustard
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley for garnish

  • Preheat Oven:
  • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
  • Prepare the Potatoes:
  • In a large bowl, toss the halved potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.
  • Roast the Potatoes:
  • Spread the potatoes out in a single layer on the prepared baking sheet. Roast for 20 minutes.
  • Cook the Bacon:
  • While the potatoes are roasting, cook the chopped bacon in a skillet over medium heat until crispy. Remove with a slotted spoon and drain on paper towels. Reserve about 1 tbsp of bacon grease.
  • Make the Honey Glaze:
  • In a small bowl, whisk together the honey, Dijon mustard, and the reserved bacon grease.
  • Combine and Finish Roasting:
  • After 20 minutes, remove the potatoes from the oven. Drizzle the honey glaze over the potatoes and sprinkle the cooked bacon on top. Toss gently to coat.
  • Return the potatoes to the oven and roast for an additional 10-15 minutes, or until the potatoes are golden brown and crispy.
  • Serve:
  • Transfer the roasted potatoes to a serving dish and garnish with chopped parsley. Serve immediately.

  • Potato Options: Use Yukon gold, red potatoes, or fingerling potatoes for best results.
  • Add Heat: Sprinkle a pinch of red pepper flakes for a spicy kick.
