  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes chopped
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes optional
  • 2 cups fresh spinach

  • Cook the Chicken:
  • Season chicken breasts with salt, pepper, paprika, and garlic powder.
  • Heat olive oil and butter in a large skillet over medium-high heat.
  • Sear chicken for 5-6 minutes per side until golden brown and cooked through. Remove and set aside.
  • Make the Sauce:
  • In the same skillet, add garlic and sauté for 30 seconds until fragrant.
  • Pour in chicken broth and scrape the bottom of the pan to deglaze.
  • Add heavy cream, Parmesan cheese, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Simmer for 3-4 minutes, stirring occasionally.
  • Finish the Dish:
  • Stir in fresh spinach and let it wilt in the sauce.
  • Return the chicken to the skillet, spooning sauce over the top. Simmer for 2 minutes to heat through.
  • Serve:
  • Serve hot over pasta, rice, or mashed potatoes. Garnish with extra Parmesan if desired.
