- 2 cups heavy cream
- 1/2 cup whole milk
- 1/3 cup granulated sugar
- 1 vanilla bean or 2 tsp pure vanilla extract
- 1 packet 2 1/4 tsp unflavored gelatin
- 3 tbsp cold water

- Fresh berries strawberries, raspberries, or blueberries
- Honey or caramel drizzle

Bloom the Gelatin:
In a small bowl, sprinkle gelatin over 3 tbsp cold water and let it sit for 5 minutes to bloom.
Heat the Cream Mixture:
In a saucepan over medium heat, combine heavy cream, whole milk, and sugar.
If using a vanilla bean, slice it open, scrape the seeds into the mixture, and add the pod as well. (If using vanilla extract, add it later.)
Heat until the mixture is warm but not boiling, stirring occasionally to dissolve the sugar.
Add Gelatin & Strain:
Remove from heat and discard the vanilla bean pod.
Stir in the bloomed gelatin until fully dissolved. If using vanilla extract, stir it in now.
Strain the mixture through a fine-mesh sieve to remove any lumps.
Pour & Chill:
Pour the mixture into 4 ramekins or serving glasses.
Refrigerate for at least 4 hours, or until set.
Serve & Enjoy:
To serve, top with fresh berries, honey, or caramel drizzle. If unmolding, dip the ramekin in warm water for a few seconds, then invert onto a plate.
