Ingredients
  

  • 2 cups heavy cream
  • 1/2 cup whole milk
  • 1/3 cup granulated sugar
  • 1 vanilla bean or 2 tsp pure vanilla extract
  • 1 packet 2 1/4 tsp unflavored gelatin
  • 3 tbsp cold water
  • For Garnish Optional:
  • Fresh berries strawberries, raspberries, or blueberries
  • Honey or caramel drizzle
  • Mint leaves

Instructions
 

  • Bloom the Gelatin:
  • In a small bowl, sprinkle gelatin over 3 tbsp cold water and let it sit for 5 minutes to bloom.
  • Heat the Cream Mixture:
  • In a saucepan over medium heat, combine heavy cream, whole milk, and sugar.
  • If using a vanilla bean, slice it open, scrape the seeds into the mixture, and add the pod as well. (If using vanilla extract, add it later.)
  • Heat until the mixture is warm but not boiling, stirring occasionally to dissolve the sugar.
  • Add Gelatin & Strain:
  • Remove from heat and discard the vanilla bean pod.
  • Stir in the bloomed gelatin until fully dissolved. If using vanilla extract, stir it in now.
  • Strain the mixture through a fine-mesh sieve to remove any lumps.
  • Pour & Chill:
  • Pour the mixture into 4 ramekins or serving glasses.
  • Refrigerate for at least 4 hours, or until set.
  • Serve & Enjoy:
  • To serve, top with fresh berries, honey, or caramel drizzle. If unmolding, dip the ramekin in warm water for a few seconds, then invert onto a plate.

Notes

  • Make It Dairy-Free: Use full-fat coconut milk instead of heavy cream and milk.
  • Make It Vegan: Use agar-agar instead of gelatin and plant-based milk.
  • Storage: Store in the fridge for up to 3 days.
