- 3 cups potatoes diced into ½-inch cubes
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 1 lb boneless skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 packet 1 oz ranch seasoning mix
- 1 ½ cups shredded cheddar cheese
- 6 slices cooked bacon crumbled
- ½ cup sour cream for serving
- 2 tbsp green onions or chives chopped (for garnish)

Prep the Potatoes:
Preheat oven to 400°F (200°C) and grease a 9x13-inch baking dish.
In a large bowl, toss diced potatoes with olive oil, garlic powder, onion powder, paprika, salt, and black pepper.
Spread the potatoes evenly in the baking dish and bake for 25 minutes, stirring halfway.
Add the Chicken & Ranch:
While potatoes are baking, toss chicken pieces with ranch seasoning in a bowl.
After 25 minutes, remove the potatoes from the oven and place the chicken evenly on top.
Return to the oven and bake for 20 minutes, or until chicken is fully cooked.
Add the Cheese & Bacon:
Sprinkle cheddar cheese and crumbled bacon over the casserole.
Bake for another 5 minutes, until the cheese melts.
Serve & Enjoy:
Remove from the oven and let sit for 5 minutes.
Top with green onions and serve with sour cream on the side.
