- For the Beef:
- 1 tbsp sesame oil
- 1 lb ground beef or ground turkey
- 3 cloves garlic minced
- 1 tsp fresh ginger grated
- ¼ cup low-sodium soy sauce
- 2 tbsp brown sugar or honey
- 1 tbsp gochujang Korean chili paste or sriracha (adjust to spice level)
- ½ tsp black pepper
- ¼ tsp red pepper flakes optional, for extra heat
- 1 tsp rice vinegar
- For Serving:
- 2 cups cooked white rice or brown rice
- 1 tbsp toasted sesame seeds
- 2 green onions sliced
- 1 small cucumber thinly sliced (optional, for crunch)
- 1 carrot shredded (optional)
Cook the Beef:
Heat sesame oil in a large skillet over medium heat.
Add ground beef, breaking it up with a spatula. Cook for 5-7 minutes until browned and fully cooked. Drain excess grease if needed.
Make the Sauce:
Stir in garlic and ginger, cooking for 1 minute until fragrant.
Add soy sauce, brown sugar, gochujang, black pepper, red pepper flakes, and rice vinegar. Stir to coat the beef evenly. Simmer for 2-3 minutes until the sauce thickens slightly.
Assemble the Bowls:
Divide cooked rice into bowls.
Spoon the Korean beef over the rice.
