Ingredients
  

  • For the Egg Salad:
  • 6 large eggs hard-boiled and chopped
  • ¼ cup mayonnaise or Greek yogurt for a lighter option
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1 tbsp chopped fresh chives or green onions
  • ½ tsp salt adjust to taste
  • ¼ tsp black pepper
  • ½ tsp paprika optional, for extra flavor
  • 1 small celery stalk finely diced (for crunch)
  • For the Wraps:
  • 8 large butter lettuce leaves or romaine leaves
  • ½ avocado sliced (optional)
  • ¼ cup cherry tomatoes halved (optional)

Instructions
 

  • Prepare the Eggs:
  • Place eggs in a pot and cover with water. Bring to a boil, then turn off the heat and cover for 10 minutes.
  • Transfer eggs to an ice bath for 5 minutes. Peel and chop.
  • Make the Egg Salad:
  • In a bowl, mix chopped eggs, mayonnaise, Dijon mustard, lemon juice, chives, salt, pepper, paprika, and celery until well combined.
  • Assemble the Lettuce Wraps:
  • Lay out lettuce leaves and spoon the egg salad into the center of each.
  • Top with avocado slices and cherry tomatoes, if using.
