Ingredients
  

  • 1 lb ground beef or ground turkey
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning or 2 tbsp homemade taco seasoning
  • 1 15 oz can black beans, drained and rinsed
  • 1 10 oz can diced tomatoes with green chilies (like Rotel)
  • 1 cup corn kernels fresh, frozen, or canned
  • 1 cup salsa mild, medium, or hot
  • 1 8 oz can tomato sauce
  • 1/2 cup sour cream
  • 2 cups shredded Mexican cheese blend
  • 6 large flour tortillas or corn tortillas for a gluten-free option
  • 1/4 cup chopped fresh cilantro for garnish

Instructions
 

  • Preheat and Prepare
  • Preheat your oven to 375°F (190°C).
  • Lightly grease a 9x13-inch baking dish.
  • Cook the Meat Mixture
  • In a large skillet, cook the ground beef and diced onion over medium heat until browned. Drain excess grease.
  • Add garlic and taco seasoning, stirring for 1 minute.
  • Stir in black beans, diced tomatoes with green chilies, corn, salsa, and tomato sauce. Simmer for 5 minutes.
  • Assemble the Layers
  • Spread a thin layer of the meat mixture on the bottom of the baking dish.
  • Place two tortillas over the meat mixture, slightly overlapping.
  • Spread half of the sour cream over the tortillas.
  • Add 1/3 of the meat mixture and 1/3 of the shredded cheese.
  • Repeat the layers two more times, ending with cheese on top.
  • Bake and Serve
  • Cover with foil and bake for 20 minutes.
  • Remove the foil and bake for another 10 minutes, until the cheese is melted and bubbly.
  • Let sit for 5 minutes before slicing.
  • Garnish with chopped cilantro and serve with extra sour cream, avocado, or salsa.

  • Make it Spicy: Add jalapeños or use spicy salsa for an extra kick.
  • Storage: Refrigerate leftovers in an airtight container for up to 4 days.
