  • 1 tablespoon sugar
  • For the Filling:
  • 1 8 oz package cream cheese, softened
  • ½ cup sweetened condensed milk
  • ¼ cup fresh key lime juice or regular lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon vanilla extract
  • For the Topping:
  • ½ cup heavy whipping cream
  • 1 tablespoon powdered sugar
  • Key lime slices and extra lime zest for garnish

Instructions
 

  • Prepare the Crust
  • In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
  • Press the mixture into six mini tart pans or cupcake liners.
  • Place in the fridge while you prepare the filling.
  • Make the Filling
  • In a large bowl, beat cream cheese until smooth.
  • Add sweetened condensed milk, key lime juice, lime zest, and vanilla extract. Mix until fully combined and creamy.
  • Assemble And Chill
  • Spoon the key lime filling into the prepared crusts and smooth the tops.
  • Refrigerate for at least 3 hours, or until firm.
  • Make the Whipped Topping
  • Beat heavy whipping cream and powdered sugar until stiff peaks form.
  • Pipe or spoon whipped cream onto each mini pie.
  • Garnish And Serve
  • Top with a slice of key lime and a sprinkle of zest for a fresh look!
