  • 1 12 oz bottle of beer (lager, pilsner, or ale works best)
  • 8 oz cream cheese softened
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 tablespoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper optional, for extra heat
  • 1 tablespoon cornstarch optional, for a thicker dip
  • Chopped green onions for garnish

Instructions
 

  • Cook the Sausage
  • In a large skillet over medium heat, cook the sausage until browned and fully cooked.
  • Drain any excess grease and set aside.
  • Make the Beer Cheese Base
  • In the same skillet, pour in the beer and bring to a gentle simmer.
  • Add cream cheese, stirring until melted and smooth.
  • Melt the Cheeses
  • Reduce heat to low, then gradually add cheddar and pepper jack cheese, stirring constantly until melted.
  • Stir in Dijon mustard, garlic powder, onion powder, smoked paprika, black pepper, and cayenne (if using).
  • Thicken (Optional)
  • If you want a thicker dip, mix 1 tablespoon cornstarch with 1 tablespoon water, then stir it into the dip and cook for 2 more minutes.
  • Combine And Serve
  • Stir the cooked sausage back into the cheese mixture.
  • Garnish with chopped green onions and serve warm with pretzels, chips, or bread.

  • Beer Choice Matters! A lager gives a mild flavor, while an IPA adds a hoppy kick.
