  • 2 cloves garlic minced
  • 3 cups chicken broth

  • 12 ounces penne or rotini pasta uncooked
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ cup heavy cream optional, for extra creaminess
  • ¼ teaspoon red pepper flakes optional, for spice
  • ¼ cup chopped fresh basil or parsley for garnish

Instructions
 

  • Cook the Chicken:
  • Heat 2 tablespoons olive oil in a large pot or deep skillet over medium-high heat.
  • Add chicken, salt, black pepper, garlic powder, and Italian seasoning.
  • Cook for 5-6 minutes, stirring occasionally, until the chicken is lightly golden but not fully cooked.
  • Add Garlic and Liquids:
  • Stir in the minced garlic and cook for 30 seconds until fragrant.
  • Pour in the chicken broth and marinara sauce, then bring to a simmer.
  • Cook the Pasta:
  • Add the uncooked pasta to the pot, ensuring it's submerged in the liquid.
  • Cover and simmer on medium heat for 12-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
  • Make It Cheesy:
  • Stir in Parmesan cheese and heavy cream (if using).
  • Sprinkle mozzarella cheese on top, cover with a lid, and let it melt for 2-3 minutes.
  • Garnish and Serve:
  • Remove from heat and sprinkle with fresh basil or parsley.
