- For the Casserole:
- 2 cups cooked shredded chicken rotisserie or leftover chicken works great!
- 1 cup uncooked rice white or brown
- 1 ½ cups chicken broth
- 1 15 oz can black beans, drained and rinsed
- 1 15 oz can corn, drained
- 1 10 oz can Rotel tomatoes with green chilies, undrained
- 1 small bell pepper diced (red or green)
- ½ cup sour cream or Greek yogurt
- 1 teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- For the Topping:
- 1 ½ cups shredded cheese cheddar, Monterey Jack, or a Mexican blend
- ½ cup crushed tortilla chips optional, for a crunchy topping
- 2 tablespoons chopped fresh cilantro for garnish
Preheat And Prep:
Preheat oven to 375°F (190°C).
Lightly grease a 9x13-inch baking dish.
