Ingredients
  

  • For the Casserole:
  • 2 cups cooked shredded chicken rotisserie or leftover chicken works great!
  • 1 cup uncooked rice white or brown
  • 1 ½ cups chicken broth
  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can corn, drained
  • 1 10 oz can Rotel tomatoes with green chilies, undrained
  • 1 small bell pepper diced (red or green)
  • ½ cup sour cream or Greek yogurt
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • For the Topping:
  • 1 ½ cups shredded cheese cheddar, Monterey Jack, or a Mexican blend
  • ½ cup crushed tortilla chips optional, for a crunchy topping
  • 2 tablespoons chopped fresh cilantro for garnish

Instructions
 

  • Preheat And Prep:
  • Preheat oven to 375°F (190°C).
  • Lightly grease a 9x13-inch baking dish.
  • Assemble the Casserole:
  • In a large mixing bowl, combine shredded chicken, uncooked rice, black beans, corn, Rotel tomatoes, bell pepper, sour cream, and all the seasonings.
  • Stir in the chicken broth until well mixed.
  • Transfer the mixture to the prepared baking dish, spreading it evenly.
  • Bake the Casserole:
  • Cover with foil and bake for 30 minutes, or until the rice is fully cooked.
  • Remove from the oven, sprinkle cheese and crushed tortilla chips on top.
  • Return to the oven, uncovered, for 5-10 minutes, until the cheese is melted and bubbly.
  • Serve And Enjoy:
  • Garnish with chopped cilantro and serve hot!
  • Pair with avocado, salsa, or extra sour cream for extra flavor.
