  • 4 cups chicken broth
  • 3 cups russet potatoes sliced into thin half-moons
  • 1 teaspoon crushed red pepper flakes optional, for spice
  • 1 cup heavy cream
  • 3 cups fresh kale chopped (or substitute with baby spinach)
  • Salt and black pepper to taste
  • ½ cup Parmesan cheese for garnish (optional)

  • Cook the Meat:
  • In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove and set aside.
  • Add the Italian sausage to the pot and cook until browned, breaking it into crumbles. Drain excess fat.
  • Sauté the Aromatics:
  • In the same pot, add the diced onion and cook until softened (2-3 minutes).
  • Stir in the garlic and cook for another 30 seconds until fragrant.
  • Simmer the Soup:
  • Pour in the chicken broth and add the sliced potatoes and red pepper flakes. Bring to a boil.
  • Reduce heat to low and let simmer for 15 minutes until potatoes are fork-tender.
  • Add Cream And Kale:
  • Stir in the heavy cream and chopped kale. Let cook for another 5 minutes until kale softens.
  • Season with salt and black pepper to taste.
  • Serve And Garnish:
  • Ladle into bowls, top with crispy bacon and grated Parmesan cheese.
  • Serve hot with crusty bread or breadsticks!
