Ingredients
  

  • For the Honey Harissa Chicken:
  • 1.5 lbs boneless skinless chicken breasts or thighs
  • 3 tablespoons harissa paste
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • For the Bowl Base Choose One or Mix Both!:
  • 2 cups cooked basmati rice brown rice, or cauliflower rice
  • 4 cups mixed greens arugula, spinach, romaine, etc.
  • Toppings:
  • 1 cup cherry tomatoes halved
  • ½ cup Persian cucumber diced
  • ½ cup pickled red onions
  • ½ cup crumbled feta cheese
  • ½ cup hummus classic or spicy
  • ½ cup tzatziki sauce
  • ¼ cup kalamata olives sliced
  • Lemon Tahini Dressing:
  • ¼ cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 small clove garlic minced
  • 2-4 tablespoons warm water to thin
  • ½ teaspoon salt

Instructions
 

  • Step 1: Marinate the Chicken
  • In a bowl, mix harissa paste, olive oil, honey, lemon juice, garlic, cumin, paprika, salt, and black pepper.
  • Add chicken, coating evenly. Cover and marinate for at least 30 minutes (or overnight for deeper flavor).
  • Step 2: Cook the Chicken
  • Heat a grill pan or skillet over medium-high heat.
  • Cook chicken for 5-7 minutes per side until fully cooked (internal temp 165°F).
  • Let rest for 5 minutes, then slice.
  • Step 3: Make the Lemon Tahini Dressing
  • In a bowl, whisk together tahini, lemon juice, olive oil, honey, garlic, and salt.
  • Add warm water, 1 tablespoon at a time, until smooth and drizzle-able.
  • Step 4: Assemble the Bowls
  • Layer your bowl: Start with rice or greens as the base.
  • Add sliced harissa chicken, then top with tomatoes, cucumbers, pickled onions, feta, olives, hummus, and tzatziki.
  • Drizzle with lemon tahini dressing and enjoy!

Notes

  • Want it spicier? Add extra harissa or a pinch of red pepper flakes.
  • Low-carb? Use cauliflower rice or go all greens!
