Ingredients
  

  • For the Tostadas:
  • 8 tostada shells store-bought or homemade
  • 1 ½ cups cooked shredded chicken rotisserie works great!
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon lime juice
  • 1 teaspoon olive oil
  • For the Beans:
  • 1 can 15 oz refried beans (black or pinto)
  • 1 tablespoon olive oil
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • For the Guacamole:
  • 2 ripe avocados
  • ½ lime juiced
  • ¼ cup diced red onion
  • ¼ cup chopped cilantro
  • ½ jalapeño finely diced (optional)
  • ½ teaspoon salt
  • Toppings Optional but Recommended!:
  • ½ cup shredded lettuce
  • ½ cup diced tomatoes
  • ¼ cup crumbled cotija or feta cheese
  • ¼ cup sour cream or Mexican crema
  • ¼ cup chopped cilantro
  • Hot sauce or salsa for serving

Instructions
 

  • Step 1: Season the Chicken
  • In a skillet over medium heat, warm olive oil, then add shredded chicken, chili powder, cumin, garlic powder, salt, black pepper, and lime juice.
  • Cook for 2-3 minutes, stirring until well coated and warmed through.
  • Step 2: Heat the Beans
  • In a saucepan, heat olive oil over medium heat.
  • Stir in refried beans, cumin, and garlic powder, cooking until warm and smooth (~2-3 minutes).
  • Step 3: Make the Guacamole
  • In a bowl, mash avocados with lime juice and salt.
  • Stir in red onion, cilantro, and jalapeño (if using).
  • Step 4: Assemble the Tostadas
  • Spread a layer of warm refried beans on each tostada shell.
  • Add shredded chicken, followed by guacamole.
  • Top with lettuce, tomatoes, cotija cheese, sour cream, and cilantro.
  • Step 5: Serve And Enjoy!
  • Serve immediately with hot sauce or salsa on the side.

Notes

  • Make it crispy! Warm tostadas in the oven at 375°F for 3-5 minutes.
  • Want extra crunch? Add crushed tortilla chips or fried onions on top!
  • Make it spicy? Use chipotle powder in the chicken or add sliced jalapeños.
  • Meal prep? Keep beans, chicken, and guacamole separate until serving.
