Easy Khao Soi: Creamy Thai Coconut Curry Noodles

Ingredients
  

  • For the Soup:
  • 2 tablespoons vegetable oil
  • 2 tablespoons red curry paste or Khao Soi curry paste if available
  • 1 teaspoon turmeric powder
  • 3 cloves garlic minced
  • 1- inch piece ginger grated
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon brown sugar
  • 1 13.5 oz can coconut milk
  • 3 cups chicken broth
  • 1 pound boneless skinless chicken thighs or breasts, sliced
  • 8 oz egg noodles or ramen noodles
  • For the Toppings:
  • ½ cup crispy fried noodles for crunch
  • ¼ cup fresh cilantro chopped
  • ¼ cup green onions chopped
  • 1 lime cut into wedges
  • ½ cup pickled mustard greens optional but authentic
  • 1 teaspoon chili oil for spice

Instructions
 

  • Step 1: Make the Curry Broth
  • Heat oil in a pot over medium heat. Add curry paste, turmeric, garlic, and ginger. Sauté for 1-2 minutes until fragrant.
  • Stir in soy sauce, fish sauce, and brown sugar.
  • Pour in coconut milk and chicken broth, stirring to combine.
  • Step 2: Cook the Chicken
  • Add chicken to the broth and simmer for 15 minutes, until tender.
  • Step 3: Prepare the Noodles
  • Cook egg noodles according to package instructions. Drain and set aside.
  • (Optional) Fry a small portion of noodles in hot oil for a crispy topping.
  • Step 4: Assemble the Bowl
  • Divide noodles into bowls.
  • Ladle hot coconut curry broth and chicken over the noodles.
  • Step 5: Garnish And Serve!
  • Top with crispy noodles, cilantro, green onions, lime wedges, and chili oil.
  • Serve immediately and enjoy!

Notes

  • Vegetarian Version? Swap chicken for tofu or mushrooms.
  • Make it spicier? Add extra curry paste or chili flakes.
  • No egg noodles? Use rice noodles or ramen.
  • Want it creamier? Add more coconut milk for extra richness.
