  • For the Mango Avocado Salsa:
  • 1 ripe mango diced
  • 1 avocado diced
  • ½ red bell pepper finely chopped
  • ¼ cup red onion finely chopped
  • 1 jalapeño finely diced (optional)
  • 2 tablespoons lime juice
  • 2 tablespoons cilantro chopped
  • ½ teaspoon salt
  • For the Salad Base:
  • 6 cups mixed greens romaine, arugula, or spinach
  • ½ cup cherry tomatoes halved
  • ¼ cup cotija cheese or feta cheese optional
  • ¼ cup crushed tortilla chips for crunch, optional
  • For the Cilantro Lime Dressing:
  • ¼ cup olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 2 tablespoons chopped cilantro
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

  • Add chicken, coat well, and marinate for at least 15 minutes (or up to 2 hours for deeper flavor).
  • Step 2: Make the Mango Avocado Salsa
  • In a bowl, combine mango, avocado, red bell pepper, red onion, jalapeño, lime juice, cilantro, and salt.
  • Toss gently and set aside.
  • Step 3: Grill the Chicken
  • Heat a grill or skillet over medium-high heat.
  • Cook chicken for 5-7 minutes per side, or until internal temperature reaches 165°F (75°C).
  • Let rest for 5 minutes, then slice.
  • Step 4: Make the Dressing
  • Whisk together olive oil, lime juice, honey, Dijon mustard, garlic, cilantro, salt, and pepper.
  • Step 5: Assemble the Salad
  • In a large bowl, layer mixed greens, cherry tomatoes, and grilled chicken.
  • Top with mango avocado salsa, cheese (if using), and tortilla chips.
