Ingredients

  • 2 cups graham cracker crumbs or digestive biscuits
  • 5 tablespoons butter melted
  • 2 tablespoons sugar
  • For the Cheesecake Filling:
  • 3 8 oz packages cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon optional, for warmth
  • 1 cup sour cream for extra creaminess
  • For the Orchard Fresh Topping:
  • 1 apple thinly sliced
  • 1 peach thinly sliced
  • ½ cup cherries pitted and halved
  • ¼ cup apricot jam for glaze
  • 1 tablespoon lemon juice
  • 1 teaspoon honey optional

Instructions
 

  • Step 1: Make the Crust
  • Preheat oven to 325°F (163°C).
  • Mix graham cracker crumbs, melted butter, and sugar until combined.
  • Press into the bottom of a 9-inch springform pan.
  • Bake for 8 minutes, then let cool.
  • Step 2: Make the Cheesecake Filling
  • In a large bowl, beat cream cheese and sugar until smooth.
  • Add eggs one at a time, mixing on low speed to avoid overmixing.
  • Stir in vanilla, cinnamon, and sour cream until combined.
  • Pour over the cooled crust and smooth the top.
  • Step 3: Bake the Cheesecake
  • Bake for 50-55 minutes, until the edges are set but the center still jiggles slightly.
  • Turn off the oven, crack the door slightly, and let the cheesecake cool for 1 hour.
  • Step 4: Chill And Prepare the Topping
  • Refrigerate for at least 4 hours or overnight.
  • In a small bowl, mix apricot jam, lemon juice, and honey. Warm slightly and brush over the fruit for a glossy finish.
  • Step 5: Assemble And Serve
  • Arrange apple, peach, and cherry slices over the cheesecake.
  • Drizzle with the apricot glaze.
