  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon lime juice
  • For the Rice:
  • 1 cup white or brown rice cooked
  • 1 teaspoon lime zest
  • 2 tablespoons lime juice
  • ¼ cup cilantro chopped
  • Toppings:
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels fresh, canned, or frozen
  • ½ cup cherry tomatoes diced
  • ½ cup red onion diced
  • 1 avocado sliced
  • ½ cup cotija or shredded cheddar cheese
  • ¼ cup sour cream or Greek yogurt
  • 1 jalapeño sliced (optional)
  • Optional Garnishes:
  • Fresh cilantro
  • Lime wedges
  • Hot sauce

Instructions
 

  • Step 1: Cook the Rice
  • Cook rice according to package instructions.
  • Stir in lime zest, lime juice, and cilantro. Set aside.
  • Step 2: Cook the Shrimp
  • In a bowl, toss shrimp with olive oil, chili powder, cumin, paprika, garlic powder, salt, black pepper, and lime juice.
  • Heat a skillet over medium-high heat and cook shrimp for 2-3 minutes per side until opaque and slightly charred. Remove from heat.
  • Step 3: Assemble the Bowls
  • Divide cooked rice among bowls.
  • Top each with shrimp, black beans, corn, tomatoes, red onion, avocado, and cheese.
  • Drizzle with sour cream and garnish with cilantro, lime wedges, and jalapeño.
