Ingredients
  

  • For the Kabobs:
  • 1 ½ lbs boneless skinless chicken breasts or thighs cut into 1-inch cubes
  • 1 ½ cups pineapple chunks fresh or canned, drained
  • 1 red bell pepper cut into chunks
  • 1 yellow bell pepper cut into chunks
  • 1 red onion cut into chunks
  • 2 tablespoons olive oil
  • 12-14 wooden skewers soaked in water for 30 minutes
  • For the Marinade:
  • cup soy sauce
  • ¼ cup pineapple juice
  • 2 tablespoons honey
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon sesame oil optional, for extra flavor
  • 2 cloves garlic minced
  • 1 teaspoon grated ginger
  • ½ teaspoon black pepper
  • For Garnish:
  • 1 tablespoon sesame seeds
  • 2 tablespoons chopped cilantro
  • Lime wedges optional

Instructions
 

  • Step 1: Marinate the Chicken
  • In a bowl, whisk together soy sauce, pineapple juice, honey, brown sugar, vinegar, olive oil, sesame oil, garlic, ginger, and black pepper.
  • Add chicken cubes to the marinade, cover, and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).
  • Step 2: Assemble the Kabobs
  • Preheat grill or grill pan to medium-high heat.
  • Thread chicken, pineapple, bell peppers, and red onion onto skewers, alternating ingredients.
  • Brush with olive oil to prevent sticking.
  • Step 3: Grill the Kabobs
  • Place skewers on the grill and cook for 12-15 minutes, turning occasionally, until chicken is fully cooked (internal temp of 165°F/75°C).
  • Brush with leftover marinade during the first few minutes of grilling for extra flavor.
  • Step 4: Garnish And Serve
  • Remove from grill and sprinkle with sesame seeds and cilantro.
  • Serve hot with steamed rice, coconut rice, or a tropical slaw!

Notes

  • No grill? Cook kabobs in a grill pan or broil in the oven on HIGH for 10-12 minutes, flipping halfway.
  • Want extra smoky flavor? Add a pinch of smoked paprika to the marinade.
  • Make it spicy? Add ½ teaspoon crushed red pepper flakes to the marinade.
