Instructions

  • Step 1: Prepare the Dough
  • In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  • In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy (~2 minutes).
  • Mix in eggs one at a time, then add vanilla extract.
  • Gradually add the dry ingredients, mixing until just combined.
  • Step 2: Chill the Dough
  • Cover the dough and refrigerate for 30 minutes (this helps with the crinkle effect).
  • Step 3: Roll the Cookies
  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In one small bowl, mix granulated sugar and cinnamon.
  • Place powdered sugar in another bowl.
  • Scoop 1 ½-inch balls of dough, roll in cinnamon-sugar, then coat in powdered sugar.
  • Step 4: Bake
  • Place cookies 2 inches apart on baking sheets.
  • Bake for 10-12 minutes, until tops are set and crinkly.
  • Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes

  • Make them extra soft? Add 1 tablespoon cornstarch to the dry ingredients.
  • Want a bolder cinnamon flavor? Increase cinnamon to 2 teaspoons in the dough.
  • Storage: Keep in an airtight container at room temp for up to 5 days.
