Step 1: Prepare the Dough
In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy (~2 minutes).
Mix in eggs one at a time, then add vanilla extract.
Gradually add the dry ingredients, mixing until just combined.
Step 2: Chill the Dough
Cover the dough and refrigerate for 30 minutes (this helps with the crinkle effect).
Step 3: Roll the Cookies
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In one small bowl, mix granulated sugar and cinnamon.
Place powdered sugar in another bowl.
Scoop 1 ½-inch balls of dough, roll in cinnamon-sugar, then coat in powdered sugar.
Step 4: Bake
Place cookies 2 inches apart on baking sheets.
Bake for 10-12 minutes, until tops are set and crinkly.
Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.
- Make them extra soft? Add 1 tablespoon cornstarch to the dry ingredients.
