  • 1 lb breakfast sausage crumbled
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 3 cups frozen hash browns
  • 8 large eggs
  • 1 cup milk
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup chopped green onions for garnish

Instructions
 

  • Step 1: Cook the Sausage And Veggies
  • Preheat oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat.
  • Add sausage, cook until browned. Remove from the pan.
  • In the same skillet, sauté onion, red pepper, and green pepper for 3-4 minutes until softened.
  • Step 2: Assemble the Casserole
  • Lightly grease a 9x13 baking dish.
  • Spread the hash browns evenly in the dish.
  • Layer on the cooked sausage and sautéed veggies.
  • Sprinkle with cheddar and mozzarella cheese.
  • Step 3: Whisk the Egg Mixture
  • In a large bowl, whisk together eggs, milk, heavy cream, garlic powder, onion powder, salt, and pepper.
  • Pour the mixture evenly over the casserole.
  • Step 4: Bake to Perfection
  • Cover with foil and bake for 30 minutes.
  • Remove foil and bake an additional 15-20 minutes or until eggs are set and top is golden.
  • Garnish And Serve
  • Top with chopped green onions before serving.

Notes

Prepare the night before and store in the fridge overnight.
Simply bake in the morning!
