Ingredients
  

  • 2 lamb shoulder steaks about 1-inch thick
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 1 tablespoon fresh thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons butter
  • 1 tablespoon lemon juice

Instructions
 

  • Step 1: Season the Lamb
  • Pat the lamb shoulder steaks dry with paper towels.
  • In a small bowl, mix olive oil, garlic, rosemary, thyme, smoked paprika, salt, and black pepper.
  • Rub the mixture all over the lamb steaks and let them marinate for at least 15 minutes (or up to 1 hour for more flavor).
  • Step 2: Sear the Lamb
  • Heat a cast-iron skillet or heavy pan over medium-high heat.
  • Add 1 tablespoon of olive oil and sear the lamb for 4-5 minutes per side until golden brown and caramelized.
  • Step 3: Add Butter And Herbs
  • Reduce heat to medium-low and add butter, more garlic, and fresh herbs to the pan.
  • Spoon the melted butter over the steaks for 1-2 minutes to keep them juicy.
  • Squeeze fresh lemon juice over the lamb before removing from the pan.
  • Step 4: Rest And Serve
  • Let the lamb rest for 5 minutes before slicing.

Notes

  • For extra tenderness, marinate the lamb for up to 24 hours.
  • Add a splash of red wine to the pan while searing for richer flavor.
  • Great for grilling or air frying too!
