Ingredients
  

  • 4 large russet potatoes or Yukon Gold
  • 3 tablespoons butter melted
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • Salt And black pepper to taste
  • 1 cup shredded cheddar cheese or your favorite cheese
  • ½ cup bacon bits cooked and crumbled
  • ¼ cup sour cream
  • 2 tablespoons green onions chopped

Instructions
 

  • Step 1: Prep the Potatoes
  • Preheat the oven to 400°F (200°C).
  • Wash and dry the potatoes.
  • Using a sharp knife, slice each potato into ¼-inch thick slices, making sure NOT to cut all the way through (leave the bottom intact). Tip: Place chopsticks or wooden spoons on either side of the potato to prevent slicing too deep.
  • Step 2: Season And Bake
  • In a small bowl, mix melted butter, olive oil, garlic powder, onion powder, paprika, salt, and black pepper.
  • Brush the mixture all over the potatoes, making sure it gets between the slices.
  • Place the potatoes on a baking sheet lined with parchment paper.
  • Bake for 35-40 minutes, until the potatoes are tender and slightly crispy on the edges.
  • Step 3: Add Cheese And Bacon
  • Remove from the oven and sprinkle shredded cheese and bacon bits over the potatoes, tucking some between the slices.
  • Bake for another 10 minutes, or until the cheese is melted and bubbly.
  • Step 4: Serve And Enjoy!
  • Drizzle with sour cream and sprinkle with green onions before serving.

Notes

  • Make it spicy: Add red pepper flakes or a drizzle of hot sauce.
  • Crispier potatoes? Bake at 425°F for an extra 5-10 minutes.
