- 4 large russet potatoes or Yukon Gold
- 3 tablespoons butter melted
- 2 tablespoons olive oil
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika

Step 1: Prep the Potatoes
Preheat the oven to 400°F (200°C).
Wash and dry the potatoes.
Using a sharp knife, slice each potato into ¼-inch thick slices, making sure NOT to cut all the way through (leave the bottom intact). Tip: Place chopsticks or wooden spoons on either side of the potato to prevent slicing too deep.
Step 2: Season And Bake
In a small bowl, mix melted butter, olive oil, garlic powder, onion powder, paprika, salt, and black pepper.
Brush the mixture all over the potatoes, making sure it gets between the slices.
Place the potatoes on a baking sheet lined with parchment paper.
Bake for 35-40 minutes, until the potatoes are tender and slightly crispy on the edges.
Step 3: Add Cheese And Bacon
Remove from the oven and sprinkle shredded cheese and bacon bits over the potatoes, tucking some between the slices.
Bake for another 10 minutes, or until the cheese is melted and bubbly.
