- For the Noodles And Protein:
- 8 oz thin rice vermicelli noodles
- 8 large shrimp peeled and deveined
- 1 small chicken breast thinly sliced
- 2 tablespoons vegetable oil
- 2 eggs lightly beaten
- 1 small onion thinly sliced
- 1 bell pepper red or yellow, julienned
- 1 small carrot julienned
- 2 cloves garlic minced
- 1 teaspoon grated ginger
- 2 green onions sliced
- For the Sauce:
- 1 ½ teaspoons curry powder
- 1 teaspoon turmeric
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- ½ teaspoon white pepper
- ½ teaspoon red pepper flakes optional
- ½ cup chicken broth

Step 1: Prepare the Noodles
Soak the rice vermicelli noodles in warm water for 5-7 minutes, or until softened but still slightly firm. Drain and set aside.
Step 2: Cook the Proteins
Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat.
Add the chicken slices and cook for 3-4 minutes until lightly browned.
Add the shrimp and cook for another 2 minutes until pink. Remove both from the pan and set aside.
Step 3: Scramble the Eggs
In the same pan, add a little more oil if needed. Pour in the beaten eggs and scramble until just set. Remove and set aside.
Step 4: Stir-Fry the Vegetables
Add the remaining 1 tablespoon of oil to the pan. Stir-fry the onion, bell pepper, and carrot for 2-3 minutes until slightly softened.
Stir in the garlic and ginger, cooking for 30 seconds until fragrant.
Step 5: Add the Noodles And Sauce
Return the chicken, shrimp, and eggs to the pan.
Add the softened noodles and pour in the sauce.
Toss everything together, stirring frequently for 3-5 minutes, until the noodles absorb the sauce.
Step 6: Garnish And Serve
Stir in the green onions and remove from heat.
Serve immediately with lime wedges and extra chili flakes if desired.
