  • 8 large flour tortillas
  • 1 lb breakfast sausage crumbled
  • 6 large eggs
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup diced green bell pepper optional
  • 1/4 cup chopped green onions optional
  • For the Sausage Gravy:
  • 1 lb breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 1/2 cups whole milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • Salt to taste

Instructions
 

  • Step 1: Cook the Sausage
  • In a large skillet, cook the 1 lb sausage over medium heat until browned and crumbled (about 5-7 minutes). Remove half of the cooked sausage for the gravy, leaving the rest in the skillet for the enchiladas.
  • Step 2: Scramble the Eggs
  • In a bowl, whisk together the eggs and milk. Pour the mixture into the skillet with the sausage (you can use the same skillet if needed).
  • Scramble the eggs with the sausage until fully cooked (about 3-4 minutes). Set aside.
  • Step 3: Prepare the Sausage Gravy
  • In the same skillet (wipe out excess grease if needed), cook the remaining 1 lb sausage until browned.
  • Stir in flour and cook for 1-2 minutes to form a roux.
  • Gradually add milk, stirring constantly to avoid lumps.
  • Add garlic powder, onion powder, black pepper, and salt to taste.
  • Simmer for 5-7 minutes until thickened to your desired consistency.
  • Step 4: Assemble the Enchiladas
  • Preheat the oven to 375°F (190°C).
  • Lay out the flour tortillas on a clean surface.
  • Divide the scrambled eggs with sausage evenly among the tortillas.
  • Add a sprinkle of cheddar cheese and Monterey Jack cheese.
  • Roll each tortilla tightly and place them in a greased 9x13-inch baking dish.
  • Step 5: Add Gravy and Bake
  • Pour the sausage gravy evenly over the enchiladas.
  • Sprinkle with a little extra shredded cheese on top.
  • Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
