Ingredients
  

  • 1 lb ground beef or ground turkey
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 can 15 oz chili beans, drained and rinsed
  • 1 can 14.5 oz diced tomatoes
  • 2 cups chicken broth or beef broth
  • 1 cup elbow macaroni uncooked
  • 1 packet chili seasoning mix or homemade chili spices
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream optional for extra creaminess
  • Salt And pepper to taste
  • Chopped green onions or cilantro for garnish

Instructions
 

  • Step 1: Cook the Beef
  • In a large pot or Dutch oven, heat a splash of oil over medium heat.
  • Add the ground beef, breaking it up with a spoon. Cook until browned and no longer pink.
  • Add the diced onion and garlic. Sauté for about 2-3 minutes until softened.
  • Step 2: Add the Chili Ingredients
  • Stir in the chili seasoning mix, chili beans, and diced tomatoes (with their juices).
  • Add the chicken broth and bring the mixture to a simmer.
  • Step 3: Cook the Macaroni
  • Stir in the uncooked elbow macaroni. Cover the pot and cook for 8-10 minutes, stirring occasionally, until the macaroni is tender and the liquid is mostly absorbed.
  • Step 4: Add the Cheese
  • Reduce the heat to low. Stir in the shredded cheddar cheese and sour cream (if using).
  • Continue stirring until the cheese is fully melted and the dish is creamy.
  • Step 5: Serve And Garnish
  • Season with salt and pepper to taste.
  • Garnish with chopped green onions or cilantro and serve hot.

Notes
