- 1 small onion diced
- 2 cloves garlic minced
- 1 can 15 oz chili beans, drained and rinsed
- 1 can 14.5 oz diced tomatoes
- 2 cups chicken broth or beef broth
- 1 cup elbow macaroni uncooked
- 1 packet chili seasoning mix or homemade chili spices
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup sour cream optional for extra creaminess
- Salt And pepper to taste

Step 1: Cook the Beef
In a large pot or Dutch oven, heat a splash of oil over medium heat.
Add the ground beef, breaking it up with a spoon. Cook until browned and no longer pink.
Add the diced onion and garlic. Sauté for about 2-3 minutes until softened.
Step 2: Add the Chili Ingredients
Stir in the chili seasoning mix, chili beans, and diced tomatoes (with their juices).
Add the chicken broth and bring the mixture to a simmer.
Step 3: Cook the Macaroni
Stir in the uncooked elbow macaroni. Cover the pot and cook for 8-10 minutes, stirring occasionally, until the macaroni is tender and the liquid is mostly absorbed.
Step 4: Add the Cheese
Reduce the heat to low. Stir in the shredded cheddar cheese and sour cream (if using).
Continue stirring until the cheese is fully melted and the dish is creamy.
Step 5: Serve And Garnish
Season with salt and pepper to taste.
