  • 2 medium sweet potatoes peeled and cut into 1-inch cubes

  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cinnamon

  • 1 lemon cut into wedges
  • 2 tablespoons fresh cilantro chopped (optional)

  • Step 1: Prep the Chicken and Sweet Potatoes
  • Preheat the oven to 400°F (200°C).
  • In a large bowl, combine olive oil, turmeric, cumin, paprika, garlic powder, cinnamon, salt, and pepper.
  • Rub the spice mixture all over the chicken thighs, making sure to coat them evenly.
  • Add the sweet potato cubes to the bowl and toss them in the remaining oil and spices.
  • Step 2: Roast the Chicken and Sweet Potatoes
  • Place the chicken thighs on a baking sheet or roasting pan, skin-side up.
  • Arrange the sweet potatoes around the chicken, ensuring they’re evenly spread out.
  • Squeeze a few wedges of lemon over the chicken and potatoes.
  • Roast in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sweet potatoes are tender and caramelized.
  • Step 3: Serve And Garnish
  • Remove the chicken and sweet potatoes from the oven.
  • Garnish with freshly chopped cilantro and serve with extra lemon wedges for added freshness.
