  • For the Teriyaki Chicken:
  • 1 ½ lbs boneless skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tablespoon oil vegetable or sesame
  • Salt And pepper to taste
  • For the Teriyaki Sauce:
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup honey or brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water slurry for thickening
  • 1 teaspoon grated ginger
  • 2 cloves garlic minced
  • 1/2 teaspoon red pepper flakes optional, for spice
  • For the Bowls:
  • 2 cups cooked white or brown rice
  • 1 cup steamed broccoli
  • 1/2 cup shredded carrots
  • 1/2 cup sliced cucumbers
  • 2 green onions sliced
  • 1 tablespoon sesame seeds for garnish

  • Step 1: Make the Teriyaki Sauce
  • In a small saucepan over medium heat, whisk together soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes.
  • Bring to a simmer, then stir in the cornstarch slurry and cook until thickened (about 2-3 minutes). Remove from heat and set aside.
  • Step 2: Cook the Chicken
  • Heat 1 tablespoon oil in a large skillet over medium-high heat.
  • Season the chicken pieces with salt and pepper, then cook until golden brown and cooked through (6-8 minutes).
  • Pour the teriyaki sauce over the chicken and toss to coat. Simmer for 2 minutes until fully glazed.
  • Step 3: Assemble the Bowls
  • Divide the cooked rice into 4 bowls.
  • Top with teriyaki chicken, steamed broccoli, shredded carrots, cucumbers, and green onions.
  • Sprinkle with sesame seeds and drizzle extra teriyaki sauce if desired.
