- 1 ½ lbs boneless skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tablespoon oil vegetable or sesame

- 2 cloves garlic minced

- 2 cups cooked white or brown rice
- 1 cup steamed broccoli
- 1/2 cup shredded carrots
- 1/2 cup sliced cucumbers
- 2 green onions sliced

Step 1: Make the Teriyaki Sauce
In a small saucepan over medium heat, whisk together soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes.
Bring to a simmer, then stir in the cornstarch slurry and cook until thickened (about 2-3 minutes). Remove from heat and set aside.
Step 2: Cook the Chicken
Heat 1 tablespoon oil in a large skillet over medium-high heat.
Season the chicken pieces with salt and pepper, then cook until golden brown and cooked through (6-8 minutes).
Pour the teriyaki sauce over the chicken and toss to coat. Simmer for 2 minutes until fully glazed.
