Step 1: Prepare the Shrimp
Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium heat.
Add the shrimp and cook for 2-3 minutes per side, until pink and cooked through.

Step 2: Make the Garlic Bread Butter
In a small bowl, mix together the softened butter, minced garlic, chopped parsley, and Parmesan cheese.

Spread the garlic butter mixture on one side of each slice of bread.
Place half the shredded mozzarella and cheddar on the non-buttered side of two slices of bread.
Layer the shrimp mixture evenly on top of the cheese.
Top with the remaining cheese and the other slices of bread, garlic butter side facing outward.
Step 4: Grill the Sandwiches
Heat a skillet or griddle over medium heat and add 1 tablespoon butter.
Place the sandwiches in the pan and cook for about 3-4 minutes per side, pressing down gently with a spatula to help the cheese melt and the bread to crisp up.
Once golden and crispy on both sides, remove from the skillet.

Slice the sandwiches in half and serve hot. You can garnish with extra parsley or a lemon wedge for an added touch.
