Ingredients
  

  • For the Shrimp Filling:
  • 1/2 lb shrimp peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic minced
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper optional for heat
  • Salt and pepper to taste
  • 1/2 teaspoon lemon juice
  • For the Garlic Bread:
  • 4 slices of bread thick, like sourdough or a baguette
  • 1/4 cup unsalted butter softened
  • 2 tablespoons garlic minced
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon grated Parmesan cheese optional
  • For the Grilled Cheese:
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese or cheese of choice
  • 1 tablespoon butter for grilling

  • Step 1: Prepare the Shrimp
  • Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium heat.
  • Add the shrimp and cook for 2-3 minutes per side, until pink and cooked through.
  • Add minced garlic, paprika, cayenne pepper, salt, pepper, and lemon juice to the shrimp, and cook for another minute until fragrant.
  • Remove from heat and set aside.
  • Step 2: Make the Garlic Bread Butter
  • In a small bowl, mix together the softened butter, minced garlic, chopped parsley, and Parmesan cheese.
  • Step 3: Assemble the Sandwiches
  • Spread the garlic butter mixture on one side of each slice of bread.
  • Place half the shredded mozzarella and cheddar on the non-buttered side of two slices of bread.
  • Layer the shrimp mixture evenly on top of the cheese.
  • Top with the remaining cheese and the other slices of bread, garlic butter side facing outward.
  • Step 4: Grill the Sandwiches
  • Heat a skillet or griddle over medium heat and add 1 tablespoon butter.
  • Place the sandwiches in the pan and cook for about 3-4 minutes per side, pressing down gently with a spatula to help the cheese melt and the bread to crisp up.
  • Once golden and crispy on both sides, remove from the skillet.
  • Step 5: Serve And Enjoy
  • Slice the sandwiches in half and serve hot. You can garnish with extra parsley or a lemon wedge for an added touch.

Notes

  • Want Extra Flavor? Add a dash of hot sauce or a few sliced jalapeños to the shrimp mixture for some heat!
